Amaranth
Ingredients
2 lbs amaranth (1 large bunch)
2 medium tomatoes, chopped
1 tsp salt
½ lb (1bunch) Chinsaga (or cut leaf vegetable of your choice)
1/2 cup groundnut powder
2 tablespoons vegetable cooking oil
3 tablespoons water
1 medium onion, chopped
Instructions
Wash the green vegetables, and chop into desirable size
Chop the onion and tomatoes and set aside.
Pour the vegetable oil in a cooking pot, fry the onion until soft and slightly brown, then add tomatoes till they look soft. Add the green leafy vegetables and stir to mix well.
Cover and let it simmer for about 20 minutes, stirring occasionally.
Mix the groundnut powder into a smooth paste and then add to the simmering vegetables. Add salt to taste.
Cook for an additional 5 minutes.
Served while hot with ugali (or your choice of swallow) or mashed bananas.
